What would be a better type of meat for an appetizer for a dinner party?

I have a dinner party planned for friday night with some of my supervisors from work coming. They hunt and know I have a freezer full of elk and mule deer meat, so which one do I serve as the main dish and which one would be better as an appetizer? I really don't want to upset my guests by not knowing proper etiquette
